Using the pulp from your juices can be an excellent way to include the fibre that you so often throw away. By utilising the pulp, you ensure that you are using the whole fruit or vegetable and your waste is minimized!

Pulp can be used as a vegetable base in many recipes such as patties, sauces, soups, broths, vegetable balls and stews. You can use as much or as little as you like, and due to the high fibre content it will add plenty of body to the meal. I will often add pulp from beetroot, carrot, celery, capsicum, zucchini and tomato based vegetable juices in sauces, curries or stews to increase the fibre and nutrient content of the meal instead of just throwing it all out.

The pulp is also excellent for garden compost, and it can even be stored in the freezer and kept for a meal that you make at a later date. If you are doing a juice-only Reboot it can be a good idea to save the pulp and use it for meals that you make while on the eating days of the Reboot program. When freezing or storing, it is best to label what you have put in the juice to make sure that the vegetables will suit the meal you plan to make. (I once made a pasta sauce with pulp containing ginger and lemon rind that I have forgotten about, I can tell you it was officially the worst meal I’ve ever made ☺)
Reboot Moussaka (serves 6-8)

Start with pulp from a vegetable juice (750mls or 24oz)) containing any vegetables. These are the vegetables that were in the juice pulp that I used:
- Silverbeet(Chard)
- Carrot
- Beetroot
- Red Capsicum
- Tomato
- Celery
- Kale
- Zucchini

Moussaka Ingredients
- Olive oil
- 1 Eggplant
- 500g Pumpkin (or Butternut squash or Sweet Potato)

Vegetable Sauce Ingredients
- Olive Oil
- Vegetable pulp (from making about 3 cups of vegetable juice)
- 2 cups of water
- 2 cups of vegetable stock or broth (optional you can just add another 2 cups of water)
- 800g tinned chopped tomatoes
- 3 garlic cloves
- 1 large onion
- 1 carrot
- 3 silverbeet (Chard) leaves (or any other green leafy vegetable)
- 1½ tsp sea or Himalayan salt
- Pepper to taste
- 1 tsp Oregano
- 1 tsp Cinnamon
- ½ tsp Allspice
- 2 bay leaves

White Sauce Ingredients
- ½ Cauliflower
- 1 garlic clove (chopped)
- Juice of ½ lemon
- 1 Tablespoon Olive oil
 4 Tablespoons of water

DirectionsPreheat oven to 180C or 350F.

Cut eggplant and pumpkin in slices. Brush with olive oil and sprinkle with a little sea salt. Bake for 20 minutes.

In a saucepan heat olive oil on moderate heat and cook the onion for a few minutes. Add garlic, carrot, silverbeet(chard) and vegetable pulp and stirfry for a few more minutes. Add the rest of the sauce ingredients stirring continuously until boiling, then reduce the heat and simmer for 35 minutes.

Steam cauliflower until just tender, then add the cooked cauliflower and all white sauce ingredients in a food processor and process.

In a baking dish, layer half the eggplant, top with half the vegetable sauce then all the pumpkin slices then the rest of the eggplant then the rest of the vegetable sauce. Top with the white cauliflower sauce and bake in the oven for 35 minutes.

Enjoy Your Reboot Moussaka!

Day 3 of Water Only Fast

Weight: 209

No food yesterday aside from some lemon juice and pulp in my water. Drank a lot of water yesterday--nearly 100oz.

Sauna: 33/12/16 (33 mins sauna, 12 mins cooldown, 16 mins sauna).  The way I determine if I've cooled down enough to return is when my heart rate goes below 100bpm.  In the sauna I usually get it up to about 140, although one day it was as high as 156.

Out of curiosity, I weighed before sauna and then after sauna.  I was at 210.4 before.  I drank 32oz of water while I was in there.  I weighed after sauna and I was at 210.  Could I have really sweated out a full 32oz-plus of water?  Intense!

Yesterday I faced some cravings.  I've come to associate those cravings and desires on the 2nd day to my body switching over into ketosis. They come on strong, then come and go for several hours, then fade away completely.

It didn't help that my favorite restaurant had my favorite food on special all day long.  *sigh*

Today I'm facing the "stomach is shrinking" feeling -- basically, my body is "complaining" that my stomach isn't full.  (In fact, I suspect there's nothing left in my entire digestive tract at this point, aside from the supplements I'm taking and the small amounts of lemon pulp.)

Tomorrow, I'll not feel any kind of hunger or cravings at all. That's just how fasting works.

We're planning a picnic for Saturday at the park with friends.  I suspect that I'll enjoy a little food.  I'm planning a chicken salad with gucamole substituted for mayo.  I'm planning to wrap it in a romaine lettuce leaf.  :)

Tomorrow I'll be working on my garden most of the day. I researched all my seeds last night to determine proper planting details.  I also realized that most of them should've been started indoors in planters over a month ago.  I'll do that next year, this year the remodel of the house has everything discombobulated.

Ah, new picture for today...

Muscle Definition

I thought I was imagining things. However, my wife pointed out the same things I'd been noticing without me even asking.

I'm starting to see muscle definition all over my body.  Arms.  Legs.  Shoulders.  Abdomen.

Now, here's the really strange part: I'm not doing *any* rigorous exercise.

In fact, I'm not even meeting the minimum recommended 10,000 steps per day.

The only thing I'm doing at this point is walking -- and not enough of it.

Aside from a little bit on Saturday where I moved 1500sq ft of flooring materials, I've really done nothing "rigorous" at all in the past 90 days.

My wife has also noticed that she is getting muscle definition in her arms and shoulders--but she's pregnant and not allowed to lift more than 20lbs.

For my wife, the only thing that she did to shift into paleo (which she was mostly already doing) was to shift from grain-fed to grass-fed proteins.

I've been grain-free for 90 days, but eating too much fruit, to be quite honest.

I just thought I'd share this little tidbit. It seems that even when you're not doing anything rigorous, this lifestyle eats body-fat and defines muscles.

Bizzy, Bizzy, Bizzy

Weight 211.4

Don't get excited, my weight didn't stay the same. It rose as high as 216 over the past 5 days. I put on a bunch of water weight and had food in my system that was lingering. Life has been very hectic the last couple weeks.

I made an incredible dinner on Sunday that still makes my mouth water when I think about it.  I baked asparagus with onions, serrano peppers, garlic salt, chopped garlic, basil and oregano with olive oil and coconut oil. I served it with some ground beef that I'd made into patties with onions, garlic, serrano and jalepeno peppers -- then cooked it with a little coconut oil and dusted it with garlic salt and black pepper.  If we'd had avacados, I'd've also made some guacamole, but we didn't.

I'm back to fasting.  I'm not making any goals for fasting beyond this coming weekend.  If I can make it through the weekend, then I'll keep going.  I have to say, not eating food and relying solely on water (and a little lemon in my water--not to mention the supplements I'm taking) is very liberating. I don't think about eating except in a creative context. I find myself thinking about how to cook things together and what nuances to add to change the flavors. I have a mild desire to eat, but not a driving need and certainly nothing I'd call "hunger".  And it's so liberating to be empty and free of the demands of the biology for continual feeding.

And my sleep! Oh how well I sleep, now!  I get sleepy at 10.  I'm usually in bed by 10:30 or 11.  I awaken at about 6:20 before my alarm goes off.  Sometimes I'll crawl back into bed and dose till 7.

One of my goals now is to reduce and eliminate stress. Sauna helps.  I was in the sauna yesterday for 30/15/15 (30 mins sauna, 15 mins cooldown, 15 mins sauna).  Playing a game or watching a documentary also helps. Getting out and doing things helps, too.  Although the garden is a bit stressful (making sure it's in on time, adjusting my schedule to fit, etc.) it is also a lot of stress relief to get out and do something productive and accomplish a task, get my hands dirty and work with the soil and plants.  This is why we were made!  We were intended to tend God's garden! :)

Good news! My heirloom seeds have arrived and my garden will be tilled on Thursday. I'm taking a day off work to get into the soil and get it tilled and ready for planting. I'll also have a bunch of chickens with my garden and I'm trying to work out details for rabbits, as well.  My chicks are on order and in the next couple weeks my coops will be in place and ready.  Then I'll get going on my rabbit pens.

Next, I need to find a good location where I can catch some wild fish.  This fall I'll do some hunting and hopefully pull down a couple deer and a passel of squirrels.  That should provide a decent larder of high-Omega-3 foods, lean protein, fresh grown veggies, less processed foods, less reliance on the system for feeding me and my family.  All positive things.  :)

I've also started reading "TRANSCEND" by Ray Kurzweil.  There are a lot of things that he advocates that dovetail into what I've been researching on the paleo lifestyle. If you have Netflix, you might look into "Transcendent Man" to see what Ray has to say about his philosophies.  One area where we deviate is that he's all about supplements and relying on medical technology and I'm all about natural living.

Really Busy...

Weight: 211.2

I've been eating a bit, and I have a bit of food and water retention going on.  Last night for dinner I had hamburger (about 8oz), steamed broccoli, guacamole, celery and cashew butter.

I'm planning a similar meal tonight.

Tomorrow I'm going to have lunch at Huhot.  This weekend we have friends coming over.

Next week, back at the regimen.

I'm actually hoping to see my weight plateau in the 210-212 range while I'm on paleo.  I'd like to see this as a new "jumping off place" to start my regimen again.

Didn't sauna or exercise in the last few days.  Just been way too busy.

Gardening season is coming up.  I ordered seeds.  Getting details worked out for my garden.  Also ordered chicks and paid for the chicken coop to raise my chickens.  Made several soups for the kiddos.  When I am eating, it takes awhile to make my food (everything is from scratch).

Stress levels are moderate.

Sleep still good. :)

Lunch Today

I wasn't intending to eat today, but my office had a "tailgate" party for the opening day of the baseball season.  (Hence why I was in jeans and a red shirt at work in the picture below.)

This is what I had to eat:

Hamburger (no bun)
Pepper-Jack cheese
Tomatoes
Jalepenos
Steamed Veggies with oil and spices

It really hit the spot! :)
